Method
- Cut the pineapple in half lengthwise and remove the core with a sharp knife, then chop the flesh into roughly 1-inch chunks.
- Peel a 1-inch piece of fresh ginger using a spoon or vegetable peeler, then grate it finely on a microplane zester or box grater.
- Pour 4 cups of filtered water into your saucepan and bring it to a rolling boil over medium-high heat.
- Once the water boils, add the pineapple chunks, grated ginger, cinnamon, and turmeric (if using) to the pot.
- Lower the heat to medium and let the mixture simmer gently for 6 to 8 minutes, stirring occasionally.
- After simmering, turn off the heat and taste the tea to check if it's strong enough. If it tastes weak, let it steep for another 2 minutes with the fruit still in the pot.
- Pour the tea through a fine mesh strainer into a clean pot or pitcher, pressing gently on the pineapple chunks to extract any remaining liquid.
- While the tea is still warm, stir in the honey and fresh lemon juice until well combined.
- Pour the tea into mugs and serve hot, or pour it into a pitcher and refrigerate it for at least 30 minutes to serve cold over ice.
Notes
Don't throw away those pineapple solids after straining. Blend them into a smoothie, stir them into yogurt, or simmer them again in less water for a second, lighter batch of tea. Store in the fridge for up to 5 days in an airtight glass pitcher. Can be frozen for up to 3 months in ice cube trays.
