Method
- Preheat your oven to 350°F (175°C) and heat for 5 minutes.
- Spread the raw almonds in a single layer on a baking sheet.
- Toast the almonds in the preheated oven for 10 to 12 minutes, stirring halfway through, until golden brown.
- Remove the baking sheet and let the almonds cool at room temperature for 3 to 5 minutes.
- Add the cooled almonds and 4 cups of water to a blender and blend on high for 2 to 3 minutes until smooth and creamy.
- Strain the mixture through a fine mesh strainer or nut milk bag into a bowl, pressing gently to extract all liquid.
- Pour the strained almond liquid into a small saucepan and add maple syrup, vanilla extract, sea salt, cinnamon, and nutmeg and whisk to combine.
- Warm the drink over medium heat, stirring occasionally, until it reaches 160°F to 170°F (do not boil).
- Serve immediately in mugs while hot.
Notes
Toast almonds the night before and store in an airtight container to make preparation faster on busy mornings.
