Ingredients

  • 1 cup raw almonds
  • 4 cups water
  • 1 tablespoon maple syrup or agave nectar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground cinnamon
  • Pinch of nutmeg

Method
 

  1. Preheat your oven to 350°F (175°C) and heat for 5 minutes.
  2. Spread the raw almonds in a single layer on a baking sheet.
  3. Toast the almonds in the preheated oven for 10 to 12 minutes, stirring halfway through, until golden brown.
  4. Remove the baking sheet and let the almonds cool at room temperature for 3 to 5 minutes.
  5. Add the cooled almonds and 4 cups of water to a blender and blend on high for 2 to 3 minutes until smooth and creamy.
  6. Strain the mixture through a fine mesh strainer or nut milk bag into a bowl, pressing gently to extract all liquid.
  7. Pour the strained almond liquid into a small saucepan and add maple syrup, vanilla extract, sea salt, cinnamon, and nutmeg and whisk to combine.
  8. Warm the drink over medium heat, stirring occasionally, until it reaches 160°F to 170°F (do not boil).
  9. Serve immediately in mugs while hot.

Notes

Toast almonds the night before and store in an airtight container to make preparation faster on busy mornings.
