Ingredients
  

Main
  • 2 ounces blanco tequila preferably 100% agave
  • 4 to 5 ounces soda water chilled
  • 1/2 ounce fresh lime juice squeezed just before serving
  • Pinch of sea salt or salt for rimming the glass
  • Ice cubes preferably large or crushed depending on preference
  • 1 lime wedge for garnish and squeezing

Equipment

  • Highball or rocks glass
  • Jigger for measuring
  • Bar spoon or regular spoon
  • Lime juicer or citrus press
  • Small cutting board and knife
  • Small shallow dish for salt (optional, for rimming)

Method
 

  1. Fill a highball or rocks glass with ice cubes, preferably large ones that melt slowly.
  2. Optional: Pour a small amount of sea salt onto a shallow dish, then rub the lime wedge around the rim of your glass and dip it gently into the salt.
  3. Cut a fresh lime in half and squeeze the juice directly into a jigger or measuring cup until you have half an ounce.
  4. Measure 2 ounces of blanco tequila using a jigger and pour it directly into your ice-filled glass.
  5. Pour your fresh lime juice into the glass with the tequila and ice.
  6. Slowly pour 4 to 5 ounces of chilled soda water into the glass, stopping just short of the rim.
  7. Using a bar spoon, stir the drink gently for about 5 seconds to combine the ingredients without bruising or over-diluting.
  8. Place a fresh lime wedge on the rim of the glass and serve immediately.

Notes

Pro Tip: Chill your glass in the freezer for 5 minutes before making the drink; a cold glass prevents ice from melting too quickly and keeps your tequila soda perfectly chilled longer. Use 100% agave tequila for best results. Squeeze lime juice fresh every time as bottled juice ruins the flavor profile. This drink must be made fresh and cannot be batched ahead of time as it loses carbonation quickly.
