Ingredients
  

Main
  • 1 3-ounce package lime or lemon flavored gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 3/4 cup good quality silver tequila
  • 1/4 cup fresh lime juice
  • 2 tablespoons simple syrup or agave nectar
  • Pinch of salt

Equipment

  • Small saucepan
  • Measuring cups and spoons
  • Whisk or spoon for stirring
  • Shot glasses or small silicone molds
  • Baking sheet or tray
  • Knife for cutting molds

Method
 

  1. Bring 1 cup of water to a rolling boil in a small saucepan over high heat.
  2. Pour the boiling water into a bowl with the gelatin and whisk for 2 minutes until fully dissolved.
  3. Stir in 1/2 cup cold water to lower the temperature.
  4. Let the gelatin mixture sit at room temperature for 3 to 5 minutes to cool slightly.
  5. Whisk in 3/4 cup tequila and 1/4 cup fresh lime juice for 1 minute until well combined.
  6. Add 2 tablespoons simple syrup (or agave nectar) and a pinch of salt, then whisk until smooth.
  7. Pour the mixture into shot glasses or silicone molds, filling each about three quarters full.
  8. Chill in the refrigerator for at least 4 hours (240 minutes) until set with a slight jiggle.

Notes

Make these up to three days ahead and keep covered in the refrigerator to allow flavors to meld.
