Ingredients

Main
  • 1 cup tapioca pearls
  • 2 cups water for cooking pearls
  • 1 cup fresh strawberries hulled and sliced
  • 1/2 cup sugar
  • 1 cup milk or dairy-free alternative
  • 1/2 cup ice cubes

Equipment

  • Large pot
  • Strainer
  • Blender
  • Measuring cups and spoons
  • Boba straws

Method

  1. Bring 2 cups of water to a boil in a large pot.
  2. Carefully add 1 cup of tapioca pearls to the boiling water and cook according to package instructions, usually around 15-20 minutes.
  3. While the pearls are cooking, combine the sliced strawberries and 1/2 cup of sugar in a blender.
  4. Blend the mixture until it becomes a smooth puree.
  5. Strain the puree through a fine mesh sieve to remove seeds and pulp.
  6. Once the tapioca pearls are cooked, strain them and rinse with cold water.
  7. In a glass, add a generous amount of cooked tapioca pearls at the bottom.
  8. Pour in the strawberry syrup, followed by 1 cup of milk and 1/2 cup of ice cubes.
  9. Stir everything together with a boba straw and enjoy!

Notes

Let the cooked tapioca pearls sit in a little sugar syrup for extra sweetness and to keep them from hardening.
