Ingredients

  • 1.5 cups frozen strawberries
  • 1/2 cup acai puree unsweetened, thawed or frozen
  • 1.5 cups coconut water chilled
  • 1/4 cup Greek yogurt plain, optional for creaminess
  • 1 to 2 tablespoons raw honey or maple syrup to taste
  • 1/2 cup ice cubes
  • Fresh strawberry slices for topping optional

Method
 

  1. Set out all your ingredients and make sure your coconut water and any fresh components are chilled before blending.
  2. Pour your acai puree into the blender first, breaking it into chunks if it's frozen solid.
  3. Add 1.5 cups of frozen strawberries directly to the blender on top of the acai.
  4. Add 1.5 cups of chilled coconut water to your blender.
  5. Add one-quarter cup of plain Greek yogurt if you want a richer, more velvety texture.
  6. Add one to two tablespoons of honey or maple syrup depending on how sweet your strawberries are and your personal preference.
  7. Add half a cup of ice cubes to the blender.
  8. Blend on high speed for 30 to 45 seconds until everything is completely smooth and there are no chunks of frozen fruit visible.
  9. Divide the refresher evenly between two tall glasses and serve immediately while it's at its coldest. Top with fresh strawberry slices if desired.

Notes

Blend everything on high speed for no more than 45 seconds total to avoid over-blending. Use the highest quality unsweetened acai puree you can find. Keep all wet ingredients cold before blending to minimize ice needed. Drink within five minutes of blending for best flavor and texture. For a thicker smoothie bowl texture, reduce coconut water to one cup.
