Method
- Heat 8 ounces of water in a kettle until it reaches a rolling boil.
- Place the black tea bag in a mug, pour the hot water over it, and steep for 3 to 4 minutes.
- Remove the tea bag, squeezing it gently against the side of the mug to extract the remaining liquid.
- Add 4 to 5 fresh mint leaves to the hot tea and gently muddle with the back of a spoon for about 10 seconds.
- Pour in 1/2 ounce fresh lemon juice and 1/2 ounce fresh lime juice.
- Add 1 tablespoon honey and stir until completely dissolved.
- Taste and adjust: add more citrus juice if it tastes too sweet, or more honey if it tastes too tart.
- Serve immediately while hot, or let cool to room temperature and pour over ice for an iced version.
Notes
For a concentrate, brew 4 tea bags in 16 ounces of hot water, steep 3 minutes, stir in 1/4 cup honey, 2 ounces lemon juice, and 2 ounces lime juice. Store in the fridge for up to one week.
