Ingredients

Chai Concentrate
  • 2 cups water
  • 3 black tea bags regular strength, not decaf
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon black pepper
  • 4 whole star anise pods
  • 3 tablespoons honey or agave syrup
  • Pinch of sea salt
Per Serving
  • 1/2 cup chai concentrate
  • 1 cup whole milk or milk of choice
  • 1 tablespoon honey optional, for extra sweetness

Equipment

  • Small saucepan
  • Measuring spoons
  • Measuring cups
  • Fine mesh strainer
  • Milk frother or whisk
  • Two mugs
  • Spoon for stirring
  • Small bowl for mixing spices

Method

  1. In a small bowl, combine ground ginger, cinnamon, cardamom, cloves, and black pepper until evenly mixed.
  2. Pour 2 cups water into a small saucepan and bring to a rolling boil over medium-high heat, about 5 minutes.
  3. Remove the pan from heat and add 3 black tea bags, the spice mixture, and 4 star anise pods.
  4. Cover and steep for 8 to 10 minutes without stirring to extract flavors.
  5. Strain the concentrate through a fine mesh strainer into a heat-safe container, gently pressing the tea bags.
  6. Stir in 3 tablespoons honey while the concentrate is still warm until fully dissolved.
  7. Allow the concentrate to cool to room temperature, then refrigerate or use immediately.
  8. Pour 1 cup of milk into a clean saucepan and heat over medium heat until steaming with small bubbles around the edges, about 3 to 4 minutes (do not boil).
  9. Froth the hot milk using a milk frother for about 30 seconds or whisk vigorously until a layer of foam forms.
  10. Divide 1/2 cup chai concentrate into each mug, then slowly pour the hot frothed milk over the concentrate, holding back the foam.
  11. Spoon the remaining milk foam on top of each latte and serve immediately.

Notes

Make a double batch of concentrate and store in the refrigerator for up to one week for quick lattes throughout the week. Stir before each use.
