  • 12 ounces rigatoni pasta
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1/4 teaspoon red pepper flakes
  • 1 can 15 ounces crushed tomatoes
  • 1/2 cup vodka
  • 1/2 cup heavy cream
  • Salt to taste
  • Fresh basil for garnish

Method
 

  1. Bring a large pot of salted water to a boil.
  2. Add the rigatoni to the boiling water and cook until al dente, according to package instructions.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  4. Add the minced garlic and red pepper flakes to the skillet, cooking for another 1-2 minutes.
  5. Pour in the crushed tomatoes and stir to combine. Simmer for about 5 minutes.
  6. Add the vodka to the sauce, stirring well, and let it cook for a few minutes to cook off the alcohol.
  7. Reduce the heat to low and mix in the heavy cream, stirring until the sauce is creamy and well-blended.
  8. Drain the rigatoni and add it directly to the sauce. Toss to coat the pasta evenly.

Notes

For extra flavor, finish with a sprinkle of freshly grated Parmesan cheese and a handful of fresh basil.
