Method
- Bring a large pot of salted water to a boil.
- Add the rigatoni to the boiling water and cook until al dente, according to package instructions.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and red pepper flakes to the skillet, cooking for another 1-2 minutes.
- Pour in the crushed tomatoes and stir to combine. Simmer for about 5 minutes.
- Add the vodka to the sauce, stirring well, and let it cook for a few minutes to cook off the alcohol.
- Reduce the heat to low and mix in the heavy cream, stirring until the sauce is creamy and well-blended.
- Drain the rigatoni and add it directly to the sauce. Toss to coat the pasta evenly.
Notes
For extra flavor, finish with a sprinkle of freshly grated Parmesan cheese and a handful of fresh basil.
