  • 2 ounces dark or spiced rum Bermuda-style preferred
  • 1 ounce fresh lime juice
  • 1 ounce simple syrup
  • 5 dashes Angostura bitters
  • 1 cup ice cubes
  • 1 lime wheel or twist for garnish
  • Pinch of nutmeg for garnish optional

Method
 

  1. Add crushed ice or small ice cubes to your highball glass until it is three-quarters full.
  2. Measure 2 ounces of dark rum and pour it over the ice in your glass.
  3. Squeeze fresh lime juice until you have 1 ounce, then add it to the glass.
  4. Pour 1 ounce of simple syrup into the glass.
  5. Add 5 dashes of Angostura bitters to the mixture.
  6. Place a swizzle stick or bar spoon vertically into the glass between your thumb and fingers.
  7. Rapidly rotate the stick back and forth between your palms, using downward pressure as you move, for 10 to 15 seconds.
  8. Remove the swizzle stick and add a lime wheel or twist on the rim, a pinch of freshly grated nutmeg if desired, and serve immediately.

Notes

The swizzle stick technique is essential for proper dilution and temperature, creating a smoother, colder drink than simple stirring. Use fresh lime juice for best results; bottled juice will make the drink taste flat. Quality Bermuda-style or dark rum with molasses and spice notes elevates the entire experience.
