Method
- Prepare your workspace and choose a clean, sturdy 5-quart bucket or punch bowl.
- Cut and juice fresh limes to yield 1 cup (8 ounces) of lime juice using a juicer or hand squeezer.
- Pour into the bucket: 2 cups dark or spiced rum, 3 cups pineapple juice, 2 cups orange juice, and 1 cup fresh lime juice; stir gently to combine.
- Add 1/2 cup simple syrup and 1 cup coconut rum if desired; stir until fully combined and taste for balance.
- Adjust flavor by adding more lime juice if too sweet or more simple syrup if too tart.
- Add 3 to 4 pounds of ice to the bucket, stirring gently to chill the mixture and allow slight dilution.
- Just before serving, pour in 1 to 2 cups of ginger ale or club soda and stir slowly to preserve carbonation.
- Garnish with pineapple chunks, orange slices, lime wheels, and maraschino cherries; serve with a ladle and glasses.
Notes
Make the rum bucket base up to 24 hours ahead and refrigerate; add ice and ginger ale when ready to serve for maximum freshness and fizz.
