Method
- Wash and peel the potatoes to remove any dirt and pesticides.
- Place the peeled potatoes in a large pot and cover with water. Boil until the potatoes are soft, about 30 minutes.
- Drain and mash the potatoes thoroughly to release the starches.
- Combine the mashed potatoes with 5 gallons of warm water in your fermentation vessel. Stir well to ensure even distribution.
- Sprinkle the yeast and sugar over the mixture and stir gently to activate the fermentation process.
- Seal the fermentation vessel with an airlock and let it sit in a warm, dark place for 3-5 days.
- After fermentation, pour the mixture into your distillation apparatus. Heat gently and collect the distillate, which is your vodka.
- Let the vodka cool and transfer it to clean glass bottles. Store in a cool, dark place.
