Ingredients
  

Main
  • 2 ounces gin preferably London Dry style
  • 0.5 ounce applejack or apple brandy
  • 0.5 ounce grenadine
  • 0.75 ounce fresh lemon juice
  • 1 egg white from a large egg
  • 1 cup ice for shaking
  • Lemon twist or cherry for garnish optional

Equipment

  • Cocktail shaker (Boston shaker preferred)
  • Jigger for measuring
  • Bar spoon
  • Hawthorne strainer
  • Fine-mesh strainer (optional)
  • Coupe glass or cocktail glass
  • Citrus squeezer or hand juicer

Method
 

  1. Fill a coupe glass with ice and cold water and let chill for about 2 minutes.
  2. Pour 2 ounces gin and 0.5 ounce applejack into the cocktail shaker without ice.
  3. Add 0.5 ounce grenadine and 0.75 ounce fresh lemon juice to the shaker.
  4. Separate 1 egg white into the shaker, discarding the yolk.
  5. Seal the shaker and dry shake vigorously for 10 to 15 seconds to whip the egg white.
  6. Add 1 cup ice to the shaker and shake again hard for another 10 to 15 seconds.
  7. Discard the ice water from the chilled glass.
  8. Strain the cocktail into the glass using a Hawthorne or fine mesh strainer, allowing foam to accumulate on top.
  9. Garnish with a lemon twist or cherry and serve immediately.

Notes

Serve immediately to enjoy the foam at its peak; foam collapses quickly so drink fresh.
