- Prepare the pineapple by peeling and chopping it into small chunks.
- In a large pot, combine the chopped pineapple and water. Bring the mixture to a gentle boil, stirring occasionally.
- Add the sugar and citric acid, stirring until fully dissolved.
- Remove the pot from heat and let it cool to room temperature.
- Sprinkle the yeast over the cooled mixture and stir gently.
- Using a funnel, pour the mixture into a fermentation container, leaving space at the top.
- Fit the airlock onto the container and place it in a cool, dark area for 2-4 weeks to ferment.
- After fermentation, strain the wine and transfer the liquid into clean bottles, sealing them tightly.
