Ingredients
  

Main
  • 3 cups fresh pineapple juice
  • 1.5 cups fresh orange juice
  • 2 cups club soda or sparkling water
  • 1 cup white rum optional
  • 2 cups fresh pineapple chunks
  • 1/2 cup maraschino cherries
  • 2 tablespoons honey optional
  • 10 to 15 fresh mint leaves
  • 4 to 6 cups ice

Equipment

  • Large punch bowl or pitcher
  • Measuring cups and spoons
  • Wooden spoon or long stirrer
  • Glasses for serving
  • Citrus juicer (optional)
  • Sharp knife
  • Ice bucket or large bowl for ice

Method
 

  1. Chill the punch bowl or pitcher in the refrigerator for 15 minutes or fill it with ice to cool the container.
  2. Combine the fresh pineapple juice and orange juice in the chilled container and stir gently to blend.
  3. If using, pour in the white rum and stir for about 30 seconds until fully incorporated.
  4. Taste the mixture and, if desired, dissolve the honey in a small splash of warm water and stir into the punch.
  5. Add 4 to 6 cups of ice to the punch bowl to chill and dilute as desired.
  6. Just before serving, pour in the club soda or sparkling water and stir gently to maintain carbonation.
  7. Garnish by floating pineapple chunks, maraschino cherries, and mint leaves on top of the punch.

Notes

Freeze pineapple chunks in ice cube trays to chill the punch without diluting as regular ice melts.
