  • 1 and 1/2 cups fresh or high-quality bottled pineapple juice
  • 1/2 cup full-fat coconut cream preferably Coco Lopez
  • 2 cups ice crushed or cubed
  • Optional pineapple wedges or maraschino cherries for garnish
  • Optional coconut flakes for rimming the glass

  • Measuring cups

  • Cocktail straws or regular straws

Method
 

  1. Step 1: Pour 1 and 1/2 cups pineapple juice into a measuring cup and 1/2 cup coconut cream into a separate container to have ingredients ready.
  2. Step 2: Add the measured coconut cream to the blender first to ensure even blending and prevent clumps.
  3. Step 3: Pour the measured pineapple juice into the blender on top of the coconut cream and stir gently with a spoon to combine.
  4. Step 4: Add 2 cups of crushed or cubed ice to the blender to achieve a frosty, slushy texture.
  5. Step 5: Secure the blender lid and blend on high speed for 45 to 60 seconds until the mixture is smooth and creamy with no ice chunks visible.
  6. Step 6: While blending, fill two tall glasses with fresh ice if desired and chill by shaking or swishing ice.
  7. Step 7: Pour the blended mocktail evenly into the two prepared glasses, filling each about three-quarters full.
  8. Step 8: Garnish each glass with a pineapple wedge, maraschino cherry, and a straw, then serve immediately for maximum freshness.

Notes

Serve immediately after blending for maximum freshness and frosty texture. If separation occurs, stir before drinking.
