  • 1.5 cups pineapple juice fresh or canned
  • 0.75 cup coconut cream canned, not coconut milk
  • 2 cups ice crushed or cubed
  • Pineapple wedges and maraschino cherries for garnish
  • 1 tablespoon simple syrup or agave nectar optional

Method
 

  1. Chill pineapple juice and coconut cream in the refrigerator for at least 10 minutes before starting.
  2. Add 1.5 cups pineapple juice to the blender first.
  3. Pour 0.75 cup coconut cream into the blender and stir lightly to recombine before blending.
  4. Add 2 cups crushed ice to the blender.
  5. If desired, add 1 tablespoon simple syrup or agave nectar for extra sweetness.
  6. Blend on high speed for 45 to 60 seconds until smooth and creamy, pausing to stir if needed.
  7. Place two tall glasses in the freezer for 2 to 3 minutes to chill.
  8. Pour the mixture evenly into the chilled glasses and garnish each with pineapple wedges and maraschino cherries.

Notes

Keep canned coconut cream in the pantry and pineapple juice in the freezer to make this drink in under 5 minutes anytime a craving hits.
