Method
- Fill a tall glass or cocktail shaker with ice cubes.
- Cut one lime in half, then cut one half into two wedges. Juice both wedges to yield about 1/2 ounce of fresh lime juice.
- Measure 2 tablespoons of simple syrup (or honey mixture) and pour into the glass.
- Rinse 10 fresh mint leaves and pat dry.
- Place mint leaves in the glass or shaker and gently muddle 5–8 times to release oils without tearing leaves.
- Add lime juice and simple syrup to the muddled mint and stir to combine.
- If using a shaker, strain the mixture into a serving glass filled with fresh ice.
- Top the glass with 4–6 ounces of chilled sparkling water or club soda, leaving about 1/2 inch of space at the rim.
- Stir gently with a bar spoon to incorporate all layers.
- Garnish with a sprig of fresh mint if desired and serve immediately.
Notes
Muddle the mint gently and serve immediately to prevent dilution and retain fresh flavor.
