Ingredients
  

Main
  • 1 cup fresh lime juice about 8 to 10 limes
  • 1/2 cup Worcestershire sauce
  • 1/4 cup hot sauce your favorite brand
  • 2 tablespoons soy sauce
  • 1 tablespoon hot pepper sauce like Tabasco, optional but recommended
  • 1 teaspoon Maggi seasoning or soy sauce powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • Salt to taste

Equipment

  • 16-ounce glass jar with lid
  • Measuring spoons and cups
  • Small whisk or spoon
  • Citrus juicer or hands for juicing
  • Fine-mesh strainer (optional)
  • Cocktail jigger

Method
 

  1. Roll 8 to 10 limes on the counter and juice them using a citrus juicer or by hand, straining out seeds and pulp to yield 1 cup fresh lime juice.
  2. Pour the lime juice into the glass jar and add Worcestershire sauce, hot sauce, soy sauce, and hot pepper sauce.
  3. Sprinkle Maggi seasoning, garlic powder, ground cumin, cayenne pepper, and black pepper into the jar.
  4. Seal the jar tightly and shake vigorously for 30 seconds, or until all dry spices are fully dissolved and the mixture is uniform.
  5. Taste about 1 tablespoon of the mix and adjust heat by adding hot pepper sauce if needed, then shake again.
  6. Add a pinch of salt, shake, and taste again, adding more salt or lime juice to balance saltiness and acidity.
  7. If the mix is too sour, add an additional tablespoon of Worcestershire sauce and shake; if too flat, squeeze in half a lime and shake.
  8. Transfer the finished michelada mix to a clean jar or bottle, label with the date, and refrigerate for up to 3 weeks, shaking before each use.

Notes

Store in the refrigerator for up to 3 weeks and shake well before each use. Serve over ice and top with cold beer.
