Method
- Chill a coupe or rocks glass in the freezer for at least 2 minutes before starting.
- Measure and pour 2 ounces mezcal, 0.75 ounces fresh lime juice, and 0.5 ounces agave nectar into the cocktail shaker.
- Crack and add 1 large egg white into the shaker, ensuring no yolk is included.
- Seal the shaker and perform a dry shake for 10 to 15 seconds to build the egg white foam.
- Add fresh ice to the shaker, reseal, and shake vigorously for another 10 to 15 seconds until the shaker is very cold.
- Double strain the mixture into the chilled glass using a Hawthorne strainer and a fine mesh strainer to remove any ice shards.
- Add 2 dashes of Angostura bitters on top of the foam, if using.
- Garnish with a lime wheel on the rim or floated on the foam and serve immediately.
Notes
Serve immediately while the drink is cold and the foam is still prominent.
