- Pour ice into a copper mug or highball glass and let it sit for 30 seconds to chill the vessel.
- Use a jigger to measure exactly 2 ounces of mezcal into the chilled glass.
- Squeeze fresh lime juice into the glass until you have 0.5 ounces, then pour it over the mezcal.
- Pour 4 to 6 ounces of ginger beer into the glass, starting with 4 ounces for balanced spice or 6 ounces for a lighter version.
- Use a bar spoon to gently stir all ingredients together for about 10 seconds.
- Take a small sip to check the balance of smoke, spice, and tartness, then adjust by adding more ginger beer or lime juice if needed.
- Cut a fresh lime wheel about a quarter-inch thick and make a small slit through the rind for garnish.
- Place the lime wheel on the rim of the glass or drop it into the drink and serve immediately while cold and carbonated.
