Method
 

  1. Squeeze 6 to 8 fresh limes to yield 3/4 cup of juice and 3 to 4 lemons to yield 1/2 cup of juice. Roll each fruit firmly on the counter before cutting and juicing to break down the cells and release more liquid.
  2. If using homemade simple syrup, heat equal parts sugar and water, let cool completely, then measure out 1/3 cup. Store-bought simple syrup works perfectly fine if you're short on time.
  3. Pour 1 1/2 cups of silver tequila into your pitcher, which is enough to serve 6 to 8 people with proper proportions.
  4. Measure 1/2 cup of triple sec and pour it into the pitcher with the tequila.
  5. Pour the 3/4 cup of fresh lime juice and 1/2 cup of fresh lemon juice into the pitcher, stirring gently.
  6. Add 1/3 cup of simple syrup to the pitcher and stir well to combine all ingredients. Taste the mixture at this point and adjust sweetness by adding up to 2 tablespoons of honey or extra simple syrup if needed.
  7. Cover the pitcher and refrigerate for at least 30 minutes, or up to 3 hours if making ahead.
  8. Pour salt onto a shallow plate and wet the rim of each glass with a lime wedge, then dip in salt to coat evenly.
  9. Fill each prepared glass with fresh ice cubes, then pour the chilled margarita mixture into the glasses until nearly full. Stir gently and garnish each glass with a lime wedge.

Notes

Always use fresh lime juice squeezed the same day you serve the margaritas for maximum brightness and flavor. Chill your glasses in the freezer for 15 minutes before serving to keep drinks cold longer. If your margaritas taste too tart, add simple syrup a teaspoon at a time until balanced. Keep the pitcher in an ice bucket filled with ice water if serving over 30 minutes to maintain cold temperature without adding ice directly to the mix. The margarita mix can be stored in a covered pitcher in the refrigerator for up to 3 days before the flavors begin to fade.
