Ingredients
  

Main
  • 3 to 4 fresh lychees peeled and pitted (or 4 tablespoons canned lychee syrup)
  • 2 ounces vodka or gin
  • 1 ounce fresh lemon juice
  • 0.5 ounce lychee syrup
  • 0.5 ounce egg white optional
  • Ice cubes for shaking
  • 1 lychee or citrus twist for garnish

Equipment

  • Cocktail shaker
  • Jigger or measuring cup
  • Hawthorne strainer or fine mesh strainer
  • Mixing glass or bar spoon
  • Coupe glass or martini glass
  • Channel knife or vegetable peeler
  • Cutting board and small knife

Method
 

  1. Prepare the lychees by peeling and pitting fresh fruit or draining canned lychees and reserving the syrup.
  2. Chill a coupe or martini glass in the freezer for at least 2 minutes.
  3. Fill a cocktail shaker halfway with ice cubes, then pour in 2 ounces of vodka or gin.
  4. Add 3 to 4 peeled lychees and 0.5 ounce of reserved lychee syrup to the shaker.
  5. Pour in 1 ounce of fresh lemon juice and 0.5 ounce of egg white if using.
  6. Shake vigorously for 12 to 15 seconds to chill the drink and aerate the egg white.
  7. Strain the cocktail into the chilled glass using a Hawthorne or fine mesh strainer.
  8. Garnish with a whole lychee or a citrus twist and serve immediately.

Notes

Serve immediately while chilled; for more stable foam use pasteurized egg white or aquafaba. Always use fresh lemon juice and shake with fresh ice.
