Ingredients
  

Main
  • 1.5 ounces white rum or 2 ounces for a stronger drink
  • 1 ounce fresh key lime juice
  • 3 ounces pineapple juice preferably fresh
  • 1.5 ounces coconut cream such as Coco Lopez
  • 1 cup ice regular or crushed
  • 1 lime wheel for garnish
  • 0.5 ounce pineapple juice for float optional
  • 1 tablespoon shredded coconut for rim optional

Equipment

  • Blender (high-speed or standard)
  • Cocktail shaker or mason jar
  • Jigger or measuring spoon
  • Citrus juicer or manual juicer
  • Strainer
  • Rocks glass or highball glass
  • Bar spoon or long spoon for stirring
  • Knife for cutting lime garnish

Method
 

  1. Pull a rocks glass or highball glass from your freezer and let it chill while you prepare the drink.
  2. Cut your key limes in half and juice them using a citrus juicer, aiming for exactly one ounce of fresh juice.
  3. Measure 1.5 ounces of white rum and pour it into your blender pitcher.
  4. Pour 1.5 ounces of coconut cream and 1 ounce of fresh key lime juice into the blender with the rum.
  5. Pour 3 ounces of pineapple juice into the blender, then add 1 cup of ice.
  6. Blend on high speed for 45 to 60 seconds until the mixture is smooth, creamy, and free of visible ice chunks.
  7. Carefully pour the blended mixture into the chilled glass, filling almost to the top.
  8. Garnish with a lime wheel and serve immediately with a straw or bar spoon.

Notes

Freeze pineapple juice in ice cube trays to prevent dilution and add extra pineapple flavor as the drink sits.
