Ingredients
  

Main
  • 1 to 2 ounces flavored syrup such as raspberry, cherry, grenadine, or hazelnut
  • 4 to 6 ounces carbonated water or club soda
  • 2 to 3 ounces heavy cream cold
  • 3 to 4 ice cubes
  • Fresh fruit or herbs for garnish optional

Equipment

  • One tall glass (10 to 12 ounces)
  • One spoon for stirring and mixing
  • A measuring spoon for syrup
  • A bottle of carbonated water or soda siphon

Method
 

  1. Add three to four ice cubes to your tall glass to chill it and keep your finished drink cold.
  2. Measure one to two ounces of your chosen flavored syrup and pour it directly over the ice.
  3. Slowly pour four to six ounces of cold club soda or sparkling water over the syrup, stirring gently as you go.
  4. Use your spoon to stir the mixture thoroughly, making sure the syrup dissolves completely and colors the entire drink evenly.
  5. Make sure your heavy cream is ice cold straight from the refrigerator before the next step.
  6. Hold a spoon just above the surface of the syrup and soda mixture, then slowly pour the cold cream over the back of the spoon to help it float on top.
  7. Watch as the cream creates gorgeous pale clouds that slowly swirl into the darker syrup below.
  8. Top your drink with a fresh mint leaf, a thin slice of lemon or lime, fresh berries, or a long spoon for drinking as optional garnish.
  9. Serve immediately and enjoy while cold and fizzy.

Notes

Keep both your syrup and cream in the coldest part of your refrigerator, and chill your glass before assembling the drink. Cold temperatures make all the difference in texture and how long the fizz lasts. Use quality syrup that actually tastes good on its own. Pour the cream slowly and deliberately to maintain the beautiful layered effect.
