Ingredients
  

Main
  • 2 ounces bourbon whiskey
  • 6 ounces hot water just off the boil
  • 1 tablespoon honey
  • 1/2 ounce fresh lemon juice about 1 tablespoon
  • 1 small cinnamon stick or 1/4 teaspoon ground cinnamon
  • 2 to 3 whole cloves or pinch of ground cloves
  • 1 thin slice fresh ginger optional
  • 1 thin slice lemon wheel for garnish
  • Pinch sea salt optional

Equipment

  • Kettle or pot for heating water
  • Mug (8 to 10 ounces)
  • Bar spoon or long handle spoon for stirring
  • Jigger for measuring bourbon
  • Citrus juicer or press for fresh lemon juice
  • Knife for cutting lemon slices and peeling
  • Cutting board

Method
 

  1. Heat 6 ounces of water in a kettle or pot until steaming and just starting to boil (around 200°F to 212°F), about 3 minutes.
  2. Rinse your mug with hot water to warm it and prevent the drink from cooling too fast.
  3. Place 1 tablespoon of honey in the bottom of the warmed mug.
  4. Measure and pour 2 ounces of bourbon whiskey into the mug over the honey.
  5. Add 1/2 ounce of fresh lemon juice to the mug.
  6. Drop in 1 small cinnamon stick (or ground cinnamon), 2 to 3 whole cloves, and 1 thin slice of fresh ginger.
  7. Slowly pour the hot water into the mug while stirring gently to dissolve the honey and mix the ingredients, about 15 seconds.
  8. Taste the drink and adjust by adding more honey for sweetness or more lemon juice for brightness if desired.
  9. Float a thin lemon wheel on top as garnish and sprinkle a pinch of sea salt if using, then serve immediately.

Notes

Serve immediately and enjoy while hot.
