  • 0.75 ounces fresh lemon juice
  • 0.5 ounces honey syrup 1:1 honey to hot water ratio
  • 0.25 ounces ginger beer
  • Cubed ice for shaking
  • Lemon wheel or twist for garnish optional

Method
 

  1. Pour 1 cup of honey into a jar and add 1 cup of hot (not boiling) water, stirring until fully combined. This honey syrup keeps in the refrigerator for up to three weeks.
  2. Fill your coupe or martini glass with ice water and let it sit while you prepare the drink to chill the glass.
  3. Cut a fresh lemon in half and juice it, aiming for exactly 0.75 ounces of juice.
  4. Add a generous handful of cubed ice to your cocktail shaker, filling it about three-quarters of the way.
  5. Pour 1.5 ounces of bourbon into the shaker using your jigger for accuracy.
  6. Add 0.5 ounces of honey syrup and 0.75 ounces of fresh lemon juice to the shaker.
  7. Pour in 0.25 ounces of ginger beer.
  8. Cap your shaker tightly and shake hard for about 10 seconds, moving your arms in quick up-and-down motions.
  9. Empty the ice water from your prepared glass and position your strainer over the top. Pour the contents of your shaker through the strainer.
  10. Express a lemon twist over the drink by twisting the peel to release the oils, then drop it into the glass as a garnish. Serve immediately.

Make your honey syrup in bulk and store it in the refrigerator so you can make Honey Deuces anytime without waiting for the syrup to cool. Always use fresh lemon juice, never bottled. Shake for the full 10 seconds to ensure proper chilling and dilution. This drink is best enjoyed immediately and should not be made ahead of time.
