Homemade Tamarind Juice

Ingredients

  • 1 cup tamarind paste from the pod or jarred
  • 6 cups water divided
  • 1/2 cup sugar or to taste
  • Juice of 2 limes about 3 tablespoons
  • Pinch of salt
  • Ice cubes for serving

Method
 

  1. Place 1 cup tamarind paste and 4 cups warm water in a blender and blend on medium speed for 2 minutes.
  2. Strain the mixture through a fine mesh strainer into a large pitcher, pressing solids with a wooden spoon to extract all liquid.
  3. Stir 1/2 cup sugar into the strained juice until completely dissolved.
  4. Add the juice of 2 limes (about 3 tablespoons) to the pitcher and stir to combine.
  5. Add a pinch of salt and stir, tasting and adjusting as needed.
  6. Pour in the remaining 2 cups water and stir to dilute to your desired strength.
  7. Fill glasses with ice cubes and pour the tamarind juice over the ice.
  8. Garnish with lime slices or mint if desired and serve immediately.

Notes

Store the juice in a sealed pitcher in the refrigerator for up to 5 days, stirring before serving and adding fresh lime juice just before serving for maximum brightness.
