Method
- Place 1 cup tamarind paste and 4 cups warm water in a blender and blend on medium speed for 2 minutes.
- Strain the mixture through a fine mesh strainer into a large pitcher, pressing solids with a wooden spoon to extract all liquid.
- Stir 1/2 cup sugar into the strained juice until completely dissolved.
- Add the juice of 2 limes (about 3 tablespoons) to the pitcher and stir to combine.
- Add a pinch of salt and stir, tasting and adjusting as needed.
- Pour in the remaining 2 cups water and stir to dilute to your desired strength.
- Fill glasses with ice cubes and pour the tamarind juice over the ice.
- Garnish with lime slices or mint if desired and serve immediately.
Notes
Store the juice in a sealed pitcher in the refrigerator for up to 5 days, stirring before serving and adding fresh lime juice just before serving for maximum brightness.
