- Slice your peaches into thin wedges, leaving the skin on for maximum flavor. If using frozen peaches, thaw them gently and mash them lightly with the back of a spoon to release their juice.
- Bring 4 cups of water to a rolling boil in your saucepan over medium-high heat.
- Remove the water from heat and immediately add your 4 black tea bags, pushing them gently beneath the surface with your spoon.
- Let the tea bags steep for exactly 3 to 4 minutes, no longer, to prevent bitterness.
- Remove the tea bags with a spoon and discard them, then add your sliced peaches and lemon slices directly to the hot tea.
- Return the pan to the stove over low heat and let it simmer very gently for 5 minutes without boiling.
- Add your 3 tablespoons of honey and a pinch of sea salt, stirring until the honey dissolves completely.
- Pour the tea through a fine-mesh strainer into your serving pitcher, catching the peach slices and lemon. If serving hot, pour into teacups and optionally float a sprig of fresh mint on top.
Notes
Store finished peach tea in an airtight pitcher for up to 3 days in the refrigerator. Use the ripest peaches you can find for maximum natural sweetness. Don't skip the salt as it enhances the peach flavor. The steeped peach slices can be eaten as a snack or added to yogurt.
