Method
- Select and wash 2 pounds of fresh ripe guavas by rinsing under cool running water, then pat them dry.
- Slice each guava in half lengthwise and use a spoon to scoop out and discard the seed cavities.
- Cut the guava halves into 2-inch chunks to ensure easy blending.
- Place the guava chunks and 2 cups of filtered water into a high-speed blender.
- Blend on high speed for 60 to 90 seconds until the mixture is smooth and no fruit chunks remain.
- Strain the blended mixture through a fine mesh strainer or cheesecloth into a large mixing bowl, pressing gently with a wooden spoon to extract the juice.
- Stir in 2 tablespoons fresh lime juice, then taste the juice and add 1 to 2 tablespoons honey or agave nectar only if needed.
- Add a pinch of sea salt and stir to enhance the fruit flavor.
- Transfer the juice to a pitcher and refrigerate for at least 2 hours until thoroughly chilled; serve over ice.
Notes
Store in an airtight pitcher in the refrigerator for up to 5 days, shaking or stirring before each pour.
