  • 1 lb Crystal Malt 40L
  • 1 oz Citra hops
  • 1 oz Mosaic hops
  • 1 oz Simcoe hops
  • 1 packet of American Ale Yeast or similar
  • Priming sugar for bottling

Equipment

  • Brewing kettle (at least 5 gallons)
  • Fermentation vessel with airlock
  • Hydrometer
  • Sanitizer
  • Bottling equipment (bottles and caps)
  • Stirring spoon
  • Thermometer

Method

  1. Heat about 3 gallons of water to around 165°F.
  2. Add the crushed grains to the hot water and stir to avoid clumps.
  3. Maintain the temperature around 152°F for about 60 minutes.
  4. Rinse the grains with hot water after mashing to extract remaining sugars.
  5. Bring the collected liquid (wort) to a boil.
  6. Add 1 oz Citra hops once boiling starts.
  7. Boil for 60 minutes, adding 1 oz of Mosaic hops at 15 minutes left.
  8. Add 1 oz of Simcoe hops in the last minute for fragrance.
  9. Cool the wort quickly using an immersion chiller or an ice bath.
  10. Transfer the cooled wort into a sanitized fermentation vessel and pitch yeast.
  11. Seal it with an airlock and let it ferment for about 1-2 weeks.

Notes

Be patient during fermentation for the best flavors. Store bottled beer in a cool, dark place.
