Frozen Mojito

A refreshing slushie-style version of the classic Cuban cocktail combining fresh mint, lime juice, rum, and ice into a frozen treat.

Ingredients
  

Main
  • 20 to 25 fresh mint leaves loosely packed
  • 1/2 cup fresh lime juice about 3 to 4 limes
  • 1/2 cup white rum
  • 1/4 cup simple syrup
  • 3 cups ice cubes packed
  • 1/4 cup club soda or sparkling water optional
  • Lime wheels and fresh mint sprigs for garnish

Equipment

  • Blender or food processor
  • Measuring cups and spoons
  • Cocktail glasses or drinking glasses
  • Lime juicer or citrus squeezer
  • Knife and cutting board
  • Muddler or wooden spoon (optional)

Method
 

  1. Pour 1/2 cup fresh lime juice, 1/2 cup white rum, and 1/4 cup simple syrup into the blender.
  2. Tear 20 to 25 fresh mint leaves by hand and add them to the blender.
  3. Add 3 cups of packed ice cubes to the blender.
  4. Blend on high for about 30 to 45 seconds until the mixture is thick and slushy with no large ice chunks.
  5. Taste and adjust sweetness by adding more simple syrup or lime juice, then blend briefly to combine.
  6. If desired, add 1/4 cup club soda and blend on low speed for 5 seconds to incorporate.
  7. Fill two glasses halfway with crushed ice and optionally chill the glasses in the freezer.
  8. Divide the frozen mojito mixture between the glasses and garnish each with a lime wheel and a mint sprig.

Notes

Blend ingredients just until slushy to avoid over-melting the ice for a perfectly thick and refreshing drink.
