Ingredients

  • 2 cups vanilla ice cream
  • 1/2 cup butterscotch syrup plus 2 tablespoons for topping
  • 1/4 cup whole milk
  • 2 tablespoons butter softened or melted
  • 1 cup cream soda or ginger ale chilled
  • 1/4 teaspoon vanilla extract
  • Pinch of sea salt
  • Whipped cream for topping optional but recommended

Method
 

  1. Pull out all your ingredients and place them on the counter where you can easily reach them.
  2. Scoop 2 cups of vanilla ice cream into your blender. You want the ice cream to be cold but soft enough to scoop easily.
  3. Pour 1/2 cup of butterscotch syrup over the ice cream in the blender.
  4. Add 1/4 cup of whole milk to the blender.
  5. Include 2 tablespoons of softened or melted butter in the blender.
  6. Add 1/4 teaspoon vanilla extract and a pinch of sea salt to the blender.
  7. Blend on high speed for about 45 seconds until the mixture is completely smooth and creamy with no visible ice cream chunks. Stop and scrape down the sides if needed, then blend for another 15 seconds.
  8. Divide the blended mixture evenly between two tall glasses, filling them about three-quarters of the way up.
  9. Slowly pour 1/2 cup of chilled cream soda into each glass, stirring gently as you pour.
  10. Drizzle 1 tablespoon of butterscotch syrup down the inside of each glass.
  11. Crown each drink with a generous dollop of whipped cream.
  12. Serve your Frozen Butterbeer right away with a spoon and straw.

Notes

Chill your glasses in the freezer for 10 minutes before pouring to keep your drink colder longer and prevent the ice cream from melting too quickly. Use quality vanilla ice cream for best results. Keep your cream soda icy cold before you start. Don't skip the butter as it creates depth and richness. Blend only until smooth to avoid a foamy texture. Serve immediately for the best balance of frozen creaminess and fizzy refreshment.
