Method
- Select peaches that yield slightly to pressure and smell fragrant, rinse under cool water, pat dry, then pit and halve them.
- Set up your juicer over a large bowl or pitcher, or prepare your blender and cheesecloth if using the blender method.
- If using a juicer, feed peach pieces through the chute slowly to extract clear juice, reserving pulp.
- If using a blender, place peach chunks and 2 tablespoons cold water in the blender, blend on high for 45 seconds until smooth, then strain through a fine mesh strainer lined with cheesecloth into a bowl, pressing with a wooden spoon to extract juice.
- Stir in 2 tablespoons fresh lemon juice and a pinch of sea salt, then taste and add 1 tablespoon raw honey if extra sweetness is needed.
- Chill the juice in the refrigerator for at least 30 minutes before serving.
- Serve over ice, optionally topping with sparkling water for a fizzy peach spritzer.
Notes
Freeze the juice in ice cube trays for up to 3 months to use in smoothies, cocktails, or iced teas without diluting them.
