Ingredients

Main
  • 6 to 8 ripe peaches about 3 pounds, pitted and halved
  • 2 tablespoons fresh lemon juice optional but recommended
  • 1 tablespoon raw honey optional, if peaches need extra sweetness
  • 2 tablespoons cold water only if using blender method
  • Pinch of sea salt enhances peach flavor

Equipment

  • Juicer or high-powered blender
  • Sharp knife
  • Cutting board
  • Fine mesh strainer or cheesecloth
  • Large bowl or pitcher
  • Wooden spoon or spatula
  • Measuring cups
  • Glass storage bottles or jars

Method

  1. Select peaches that yield slightly to pressure and smell fragrant, rinse under cool water, pat dry, then pit and halve them.
  2. Set up your juicer over a large bowl or pitcher, or prepare your blender and cheesecloth if using the blender method.
  3. If using a juicer, feed peach pieces through the chute slowly to extract clear juice, reserving pulp.
  4. If using a blender, place peach chunks and 2 tablespoons cold water in the blender, blend on high for 45 seconds until smooth, then strain through a fine mesh strainer lined with cheesecloth into a bowl, pressing with a wooden spoon to extract juice.
  5. Stir in 2 tablespoons fresh lemon juice and a pinch of sea salt, then taste and add 1 tablespoon raw honey if extra sweetness is needed.
  6. Chill the juice in the refrigerator for at least 30 minutes before serving.
  7. Serve over ice, optionally topping with sparkling water for a fizzy peach spritzer.

Notes

Freeze the juice in ice cube trays for up to 3 months to use in smoothies, cocktails, or iced teas without diluting them.
