Ingredients
  

Main
  • Fresh kale: 2 cups loosely packed about 3 ounces, stems removed and leaves chopped
  • Fresh lemon juice: 2 tablespoons about 1 medium lemon
  • Fresh ginger root: 1/2 inch piece peeled and roughly chopped
  • Honeydew melon: 1 cup fresh cubed or frozen
  • Green apple: 1 medium cored and chopped (Granny Smith or Honeycrisp)
  • Coconut water: 1 cup unsweetened
  • Filtered water: 1/2 cup
  • Raw honey: 1 tablespoon or agave nectar
  • Ice cubes: 1 cup loosely packed

Equipment

  • High-powered blender (e.g., Vitamix or Ninja)
  • Sharp chef's knife
  • Cutting board
  • Measuring cups and spoons
  • Fine-mesh sieve or strainer (optional)
  • 2 tall glasses

Method
 

  1. Remove stems from kale leaves and chop into 2-inch pieces.
  2. Peel and roughly chop ginger; core and chop the green apple; cube the honeydew melon.
  3. Cut lemon in half and juice, removing any seeds.
  4. Add coconut water and filtered water to the blender.
  5. Layer chopped kale on top of the liquids.
  6. Add honeydew melon cubes, chopped apple, and ginger pieces to the blender.
  7. Drizzle in raw honey and pour in fresh lemon juice.
  8. Top with ice cubes, blend on low for 5 seconds then on high for 45–60 seconds until smooth.
  9. Optional: strain the mixture through a fine-mesh sieve for a silky texture.
  10. Divide into two glasses and serve immediately over fresh ice.
