Ingredients
  

Main
  • 2 tablespoons dried elderberries
  • 2 cups fresh water
  • 1 to 2 teaspoons raw honey per cup optional
  • 1/2 teaspoon fresh lemon juice per cup optional
  • 1 cinnamon stick optional
  • 2 thin slices fresh ginger optional

  • Fine mesh strainer or tea infuser

  • Honey dipper (optional)

Method
 

  1. Measure 2 tablespoons of dried elderberries and set aside.
  2. Bring 2 cups of fresh water to a rolling boil in a small saucepan over medium-high heat.
  3. Add the cinnamon stick and fresh ginger slices if using and warm together for 1 minute.
  4. Stir in the dried elderberries, reduce heat to medium-low, and simmer gently.
  5. Steep for 12 to 15 minutes, stirring occasionally to extract full flavor.
  6. Strain the tea through a fine mesh strainer into mugs, discarding the berries and spices.
  7. Stir in 1 to 2 teaspoons of raw honey per cup and 1/2 teaspoon of fresh lemon juice per cup, adjusting to taste.

Notes

Leftover elderberries can be refrigerated and resteeped the next day with fresh water for a second batch.
