Ingredients
  

Main
  • 1 medium dragon fruit about 12 ounces, peeled and cut into chunks
  • 1 cup coconut water chilled
  • 2 tablespoons fresh lime juice freshly squeezed
  • 1 tablespoon agave nectar or honey
  • 1 cup ice
  • 1/2 cup sparkling water optional, for added fizz
  • 3 to 4 fresh mint leaves for garnish

  • Sharp knife for cutting dragon fruit
  • Measuring cups and spoons
  • Tall drinking glasses
  • Spoon for scooping dragon fruit flesh
  • Citrus juicer or hand juicer (optional)
  • Fine-mesh strainer (optional)

Method
 

  1. Choose a ripe dragon fruit, cut it in half lengthwise, and scoop out the flesh before cutting it into chunks.
  2. Pour 1 cup of chilled coconut water into the blender and add 2 tablespoons of freshly squeezed lime juice.
  3. Add the dragon fruit chunks to the blender to create a smooth blending base.
  4. Pour in 1 tablespoon of agave nectar or honey; adjust sweetness to taste.
  5. Add 1 cup of ice to the blender for a chilled, slushy texture.
  6. Blend on high speed for 45 to 60 seconds until completely smooth.
  7. If desired, strain the mixture through a fine mesh strainer to remove seeds for extra smoothness.
  8. Taste and adjust: add a splash more lime juice or sweetener if needed.
  9. Stir in 1/2 cup of sparkling water if you prefer a fizzy drink.
  10. Serve immediately over fresh ice in tall glasses and garnish with mint leaves.
