- Cut the dragon fruit in half and scoop out the flesh, then chop into rough 1-inch cubes.
- Add the cubed dragon fruit and 1/2 cup of ice to the blender and pulse for about 30 seconds until smooth and silky.
- Strain the blended fruit through a fine-mesh strainer into a bowl, pressing gently to yield about 1 cup of juice.
- Add 1/2 cup fresh ice to the cocktail shaker, then pour in the tequila, lime juice, agave nectar, and strained dragon fruit juice.
- Place the lid on the shaker and shake vigorously for 10 to 12 seconds until the outside feels very cold.
- While shaking, chill two cocktail glasses by filling with ice and water for 30 seconds, then discard the ice and water.
- Using a hawthorne or bar strainer, pour the margarita into the chilled glasses over fresh ice.
- Rub a lime wheel around the rim of each glass and dip in sea salt if desired.
- Garnish each glass with a lime wheel and a mint sprig before serving immediately.

Serve immediately for best flavor and appearance. Straining the dragon fruit juice ensures a silky, clear margarita without fibrous bits.
