Ingredients
  

Main
  • 3 medium dragon fruits about 1 pound total, pink or white variety
  • 1/2 cup fresh lime juice about 3 limes
  • 1/4 cup coconut water or filtered water
  • 1 tablespoon raw honey or agave nectar optional
  • 1/2 cup ice cubes

  • Sharp knife
  • Cutting board
  • Blender or high-powered juicer
  • Fine-mesh strainer (optional)
  • Spoon
  • Two glasses
  • Wooden spoon

Method
 

  1. Select and inspect 3 ripe dragon fruits, choosing fruit that gives slightly when squeezed.
  2. Rinse the dragon fruits under cool running water, pat dry.
  3. Cut the dragon fruits in half vertically using a sharp knife.
  4. Scoop out the flesh with a spoon and discard the thick skin.
  5. Remove any brown or blackened sections from the flesh.
  6. Place the dragon fruit flesh in a blender or juicer.
  7. Add 1/2 cup fresh lime juice, 1/4 cup coconut water and 1 tablespoon raw honey if using.
  8. Blend on high speed for 60 to 90 seconds until completely smooth.
  9. Strain the juice through a fine mesh strainer for a pulp-free texture, if desired.
  10. Fill two glasses with ice cubes and pour the juice over the ice.

Notes

Best served immediately to preserve vibrant color and freshness.
