A vibrant pink copycat of Starbucks' dragon fruit drink made with real dragon fruit, coconut milk, and simple syrup for a refreshing tropical refresher.

Ingredients
  

Main
  • 1 cup about half a fresh dragon fruit or 1 cup frozen chunks fresh or frozen dragon fruit
  • 1/2 cup coconut milk or milk of choice
  • 2 tablespoons simple syrup
  • 1/4 cup water or coconut water
  • 1 cup ice
  • Optional garnish: whipped cream dragon fruit pieces, or a splash of coconut cream on top

Equipment

  • Blender or food processor
  • Tall drinking glass
  • Measuring cups and spoons
  • Spoon for stirring
  • Ice maker or freezer
  • Knife for cutting dragon fruit
  • Cutting board

Method
 

  1. Slice fresh dragon fruit in half and scoop out the flesh, or measure frozen dragon fruit directly.
  2. Add 1 cup of dragon fruit chunks to the blender.
  3. Pour in 1/2 cup coconut milk to the blender with the dragon fruit.
  4. Add 2 tablespoons simple syrup to the blender.
  5. Pour in 1/4 cup water or coconut water.
  6. Blend on high speed for about 1 minute until completely smooth, stopping to scrape down sides if needed.
  7. Fill a tall glass with 1 cup of ice.
  8. Pour the blended dragon fruit mixture over the ice and stir gently.
  9. Top with optional whipped cream, dragon fruit pieces, or a splash of coconut cream and serve immediately.

Notes

Serve immediately after blending for the best color and texture.
