Cucumber and Sour Cream

  • 2 large cucumbers peeled and sliced thin
  • 1 cup sour cream
  • 1 tablespoon fresh dill chopped (or 1 teaspoon dried dill)
  • 1 tablespoon white vinegar
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Peel the cucumbers and slice them thinly.
  2. Place the sliced cucumbers in a colander and sprinkle with salt to draw out excess moisture.
  3. In a mixing bowl, combine sour cream, dill, white vinegar, and a pinch of salt and pepper.
  4. Rinse the salted cucumbers under cold water to remove excess salt, then pat dry.
  5. Add the cucumbers to the bowl with the dressing and toss gently to coat evenly.
  6. Cover and chill in the refrigerator for at least 30 minutes.
  7. After chilling, taste and adjust seasoning if necessary.
  8. Transfer to a serving dish and garnish with additional fresh dill if desired before serving.

Notes

Serve chilled for a refreshing experience. Perfect as a side dish for grilled meats.
