  • 1 pound fresh ginger root peeled and sliced thin
  • 2 cups sugar plus extra for coating
  • 2 cups water
  • 1/4 teaspoon salt

Method
 

  1. Start by peeling and thinly slicing the fresh ginger. Thin slices help it cook evenly and absorb sweetness better.
  2. Place the ginger slices in a pot and cover with water. Bring to a boil over medium heat to soften the ginger.
  3. Reduce the heat and let it simmer for about 30 minutes to tenderize the ginger.
  4. Strain the ginger and discard the cooking water.
  5. In the same pot, combine 2 cups of sugar and 2 cups of fresh water. Stir to dissolve and bring it to a gentle boil.
  6. Add the drained ginger to the sugar syrup and return to a gentle simmer.
  7. Simmer for another 30-45 minutes, or until the ginger becomes translucent.
  8. Remove the ginger from the syrup and let it cool slightly. Roll the ginger in granulated sugar, then spread it out on a parchment-lined baking sheet to dry.

Notes

For an extra crunch, let the ginger sit out overnight to fully dry before storing.
