Ingredients

  • 4 cups fresh or frozen cranberries
  • 4 cups water
  • 1 cup sugar adjust to taste
  • 1 tablespoon lemon juice optional, for brightness

Method
 

  1. Rinse the cranberries under cold water to remove any debris.
  2. In a large pot, combine the cranberries and water.
  3. Bring the pot to a boil over medium heat, then reduce the heat.
  4. Simmer for about 20 minutes, stirring occasionally.
  5. Use a fine mesh strainer to separate the juice from the cranberry pulp.
  6. Return the strained juice to the pot and add sugar and lemon juice.
  7. Stir until the sugar is dissolved.
  8. Prepare your canning jars by sterilizing them.
  9. Using a canning funnel, fill the jars with the hot juice, leaving half an inch of headspace.
  10. Seal the jars with lids and process in a boiling water bath for 10 minutes.

Notes

Ensure jars are properly sealed to prevent spoilage. Adjust sweetness to taste.
