  • 2 cups all-purpose flour
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup fruit preserves apricot or peach work well

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease your baking dish with butter or non-stick spray.
  3. In a mixing bowl, combine the flour, baking powder, cinnamon, and salt.
  4. In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  5. Add the egg and vanilla extract to the butter mixture, and mix until combined.
  6. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  7. Press half of the dough into the bottom of your prepared baking dish.
  8. Spread the fruit preserves evenly over the dough.
  9. Crumble the remaining dough on top to create a textured crust.
  10. Bake in the preheated oven for about 30 minutes or until the top is golden brown.
  11. Let the cortadillo cool in the pan for at least 15 minutes before slicing.

Notes

Serve warm or let it cool completely and dust with powdered sugar for an extra touch.
