Method
- Start by heating 5 gallons of water in a large pot to about 165°F (74°C).
- Slowly stir in the 5 lbs of cracked corn to create a mash.
- Maintain the mash temperature at around 150°F (65°C) for about an hour.
- Cool the mash to about 80°F (27°C).
- Stir in the 5 lbs of malted barley and sugar, if using.
- Transfer the mash to your fermentation vessel and add the distiller's yeast.
- Seal the vessel with an airlock and let it ferment for about 1-2 weeks.
- Once fermentation is complete, filter the mash to separate the liquid from the solids.
- Distill the liquid to create your whiskey, following safe distillation practices.
