Ingredients

  • 2 ounces chilled vodka
  • 1 ounce coconut cream
  • 0.5 ounces white rum optional
  • 0.5 ounces fresh pineapple juice
  • 2 dashes vanilla extract
  • about 1 cup fresh ice
  • 2 tablespoons toasted coconut flakes for rimming
  • 0.5 teaspoon coconut oil for rim adhesive
  • Pineapple wedge or toasted coconut for garnish

Method
 

  1. Chill the martini glass in the freezer for at least 10 minutes.
  2. Spread toasted coconut flakes on a small plate, brush the rim of the chilled glass with coconut oil, then dip the rim into the flakes to coat evenly.
  3. Add fresh ice to the cocktail shaker until it is about three-quarters full.
  4. Pour 2 ounces of chilled vodka into the shaker.
  5. Add 1 ounce of coconut cream to the shaker.
  6. Pour in 0.5 ounces of white rum, 0.5 ounces of fresh pineapple juice, and add 2 dashes of vanilla extract.
  7. Cap the shaker and shake vigorously for 10 to 15 seconds until the outside of the shaker is frosty.
  8. Strain the cocktail into the prepared martini glass, leaving the ice behind in the shaker.

Notes

Serve immediately for best flavor and texture. Use fresh ice and fully chilled ingredients.
