  • 2 ounces light or white rum
  • 3 ounces fresh pineapple juice
  • 1.5 ounces Coco Lopez cream of coconut
  • 1 cup crushed ice or cubed ice
  • Pineapple wedge for garnish
  • Maraschino cherry for garnish optional

  • Cocktail shaker or mason jar with a tight-fitting lid
  • Jigger or shot glass for measuring
  • Cocktail strainer
  • Highball or hurricane glass
  • Bar spoon or regular teaspoon
  • Ice maker or ice from your freezer
  • Citrus knife or paring knife for garnish

Method
 

  1. Fill a highball or hurricane glass with ice to chill while preparing the drink.
  2. Pour 2 ounces of light or white rum into a cocktail shaker or mason jar using a jigger.
  3. Add 1.5 ounces of Coco Lopez cream of coconut to the shaker.
  4. Pour in 3 ounces of fresh pineapple juice.
  5. Add approximately 1 cup of crushed ice to the shaker and secure the lid.
  6. Shake vigorously for 10 to 15 seconds until the shaker feels frosty and cold.
  7. Discard the ice from the chilled serving glass and strain the cocktail into the glass.
  8. Garnish with a pineapple wedge and maraschino cherry, then serve immediately.

Notes

Shake the Coco Lopez can thoroughly before opening to ensure the cream is well mixed. Serve immediately for the best cold and frosty texture.
