  • 2 ounces white or light rum the base spirit
  • 0.75 ounces fresh lime juice essential for tartness
  • 0.5 ounces simple syrup balances acidity
  • 1 large egg white optional, creates silky texture
  • Ice for shaking and serving
  • Lime wheel or twist for garnish

  • Cocktail shaker (Boston shaker or standard shaker)
  • Jigger for measuring spirits and mixers
  • Bar spoon for stirring
  • Hawthorne strainer
  • Citrus juicer or reamer
  • Coupe glass or rocks glass
  • Fine mesh strainer (optional, for double straining)
  • Cutting board and knife for citrus garnish

Method
 

  1. Pour 2 ounces of white rum into a cocktail shaker using a jigger to ensure accurate measurement.
  2. Add 0.75 ounces of fresh lime juice to the shaker.
  3. Pour 0.5 ounces of simple syrup into the shaker.
  4. Separate one large egg white from the yolk and add the egg white to the shaker.
  5. Close the shaker and dry shake vigorously for 10 seconds without ice to emulsify the egg white.
  6. Add a large handful of ice cubes to the shaker.
  7. Wet shake the mixture hard for 10 to 15 seconds until the shaker is cold.
  8. Use a Hawthorne strainer to pour the drink into a chilled coupe glass, double strain with a fine mesh strainer if desired.
  9. Garnish with a lime wheel or twist and serve immediately while the foam is still thick.

Notes

Dry shake the egg white before adding ice for best foam stability and always use fresh lime juice for optimal brightness.
