  • 2 cups vanilla soft serve ice cream
  • 1 cup fresh lemon juice about 4 to 5 lemons
  • 1 cup water
  • 1/4 cup granulated sugar
  • 1 cup ice cubes

Method
 

  1. Measure out all your ingredients before you begin to ensure your soft serve stays frozen longer.
  2. Cut your lemons in half and juice them until you have one full cup of fresh lemon juice.
  3. Pour the fresh lemon juice, water, and sugar into your blender.
  4. Scoop the vanilla soft serve into the blender with your other ingredients.
  5. Pour in the ice cubes last to help prevent the blender from getting stuck.
  6. Blend on high speed for 30 to 45 seconds, stopping halfway through to stir if needed, until smooth and sippable.
  7. Check the consistency. If too thick, add a splash of water and blend again. If too thin, add another scoop of soft serve and pulse until combined.
  8. Pour into tall glasses right away and serve immediately while fresh and cold.

Notes

Use soft serve ice cream straight from the machine if possible for the smoothest texture. Fresh lemon juice is essential for the best flavor. Serve immediately as the drink will begin to separate and melt if it sits. Store any leftovers in the refrigerator for up to 24 hours and re-blend before serving.
