  • 1 cup frozen mango chunks
  • 1 cup frozen pineapple chunks
  • 1 ripe banana peeled and sliced
  • 1/2 cup coconut milk canned, full-fat
  • 1/2 cup Greek yogurt or plain yogurt
  • 1/2 cup unsweetened almond milk or coconut water
  • 1 tablespoon raw honey or agave nectar
  • 1/2 teaspoon vanilla extract
  • Ice cubes optional, if you prefer extra thickness

Method
 

  1. Measure 1 cup frozen mango chunks and 1 cup frozen pineapple chunks and set aside.
  2. Peel 1 ripe banana and slice into 1-inch pieces, then place in the blender pitcher.
  3. Add the frozen mango and pineapple chunks on top of the banana in the blender.
  4. Stir the canned coconut milk to combine the solids and liquid, then pour 1/2 cup into the blender.
  5. Add 1/2 cup Greek yogurt and 1/2 cup unsweetened almond milk (or coconut water) to the blender.
  6. Add 1 tablespoon raw honey (or agave nectar) and 1/2 teaspoon vanilla extract.
  7. Secure the blender lid and blend on high speed for 45 to 60 seconds until smooth.
  8. Immediately pour the smoothie into two tall glasses and serve.

Notes

For an even thicker smoothie, freeze banana slices ahead of time and use them instead of fresh banana.
